Heart-Healthy Recipes for Fall

Just because summer is over doesn’t mean you can’t be healthy!

Trying to stay healthy is no reason to avoid your favorite fall foods! Some seasonal produce such as pumpkins, Brussels sprouts, squash, turnips and apples, are high in vitamins and rich in antioxidants – not to mention, they are delicious. Although there are many healthy fall meals to prepare, I’ve made a list of some that contain pumpkin, kale, and butternut squash.

Crispy Tamari Kale Chips
Kale is packed with vitamins and minerals, and has become more popular than ever. One cup of kale is only 33 calories and has roughly 3 grams of protein, vitamins A,C, and K, and many more health benefits. Interested? Check out the recipe!

Pumpkin Ravioli
The calorie count for meet and cheese in ravioli can be very high. Replacing cheese with pumpkin brings one dish to about 200 calories, and because pumpkin is high in fiber, it is healthy for the heart! Take a look at the recipe here.

Are you a huge fan of pumpkin? Here are 12 healthy pumpkin recipes!

Apple-Butternut Squash Soup
This is a great example of a combination of two fall produce favorites. Adding pine nuts and Parmesan cheese will add a lot of flavor, and it’s jam packed with protein and fiber! Check out the recipe.

Rosemary-Apple Bread
This bread has 75 percent less fat than a typical loaf! Also, eating rosemary can help muscles and potentially boost long-term memory. The best part is there is only 95 calories per slice. Take a look at the recipe.

According to Medical News Today, “rosemary has been hailed since ancient times for its medical properties. Rosemary was traditionally used to help alleviate muscle pain, improve memory, boost the immune and circulatory system, and promote hair growth.” Read more
